Hunkered down for Hurricane Sandy like we are?! Oh my goodness!! Connecticut is going crazy in preparation and I got a text message last night from our school's emergency system that we are closed until Thursday!
We've been watching the weather non-stop (it's sort of addicting) and battening down the hatches to make sure we do whatever it takes to stay safe. Part of my job is to make sure we have plenty of yummy food to make and these cinnamon apple pancakes were perfect for our first cozy, stormy morning inside :)
VERY EASY
Pancake Mix
Apples
Cinnamon
1. Make your pancakes from scratch or with a mix (I use mix) and add a couple shakes of cinnamon
2. Chop up your apples to little bite size pieces and microwave them for about a minute so they are soft
3. Add the apples to the pancakes mix and make as usual
4. Pour REAL maple syrup and serve!
